We use a halogen-filled quartz tube that sends radiant energy straight to the surface of the food.&#xA;It lets you play with &amp;ldquo;step-wise&amp;rdquo; control. You can jump from 150°C to 220°C and back down again in a heartbeat. The lamp just follows the signal from your PLC without hesitation.&#xA;&lt;strong&gt;The hardware side of things&lt;/strong&gt;&#xA;To make this work, you need high-wattage quartz glass. It has to be tough enough to handle the shock of cycling on and off rapidly without cracking. We also use reinforced connectors because, in a loud industrial kitchen, vibration is the enemy. You don&amp;rsquo;t want your lamps shaking loose mid-shift.&#xA;But here&amp;rsquo;s the catch: you have to be careful with your power density.&#xA;Yes, a high-wattage bulb gives you that instant snap you need for a perfect crust, but it puts a massive strain on your switching relays. If you try to save a few bucks with cheap contactors, they&amp;rsquo;ll burn out fast. You really need solid-state relays (SSRs) to handle that kind of frequency.&#xA;&lt;strong&gt;Keeping it running on the floor&lt;/strong&gt;&#xA;When you&amp;rsquo;re &lt;a href=&#34;https://goldisgood.com&#34;&gt;wiring&lt;/a&gt; these into a steam oven, it&amp;rsquo;s all about the balance between heat and moisture. The quartz envelope can handle the humidity just fine, but you&amp;rsquo;ve got to keep the reflectors clean.&#xA;If grease builds up on the mirror, the heat doesn&amp;rsquo;t go where it&amp;rsquo;s supposed to. The lamps have to run hotter to compensate, which just kills their lifespan faster. Keep them shiny, and they&amp;rsquo;ll keep performing.&lt;/p&gt;</description>
