
Why you might want to ditch those resistance wires for quartz tubes
Most bakery ovens are still stuck using old-school resistance wires. You know the ones—they heat up the air, and then the air eventually heats up your bread. It’s a slow crawl. You lose a ton of heat along the way, and it just feels inefficient. We’ve been swapping those out for circular quartz infrared tubes, and it completely changes how the oven actually works. The secret is in how the heat moves. Resistance wires rely on convection, which is basically just heating the room. Infrared quartz tubes are different. They use radiation. The energy moves in a straight shot and hits your product directly. You’re basically cutting out the middleman. Because you aren’t wasting time heating up every cubic inch of air in the oven, you hit your target temperature way faster. Your electricity bill thanks you, too, because you’re using fewer kilowatt-hours per batch. About the quartz itself… We use high-purity quartz glass. It’s tough when it comes to extreme temperature swings, and it lets those infrared waves slide right through without soaking up the heat. Since the heat is concentrated, you get a lot more power in a much smaller space. And here is the cool part: you can actually pick the wavelength based on what you’re baking. Want a hard sear on the surface? Go with short-wave. Need the heat to sink deep into the dough? Medium-wave is your best bet. The catch (because there’s always one) You can’t just rip out a wire coil and pop a quartz tube into the same slot. It doesn’t work like that. You’ll need to rethink your layout and set up new controllers to handle how quickly these things heat up. Then there’s the fragility. Quartz loves heat, but it hates being hit. If your crew is a bit rough with the oven racks, these tubes can crack. You’ve got to install guards or be really precise with your spacing so they don’t take a beating during a busy shift. Still, when you look at the numbers, the shorter pre-heating times and faster bake cycles usually pay for the upgrade pretty quickly.
