How to get your pizza out the door in 90 seconds
Most convection ovens just heat up the air. And let’s be honest—that’s slow. If you’re trying to slash your bake time from five minutes down to 90 seconds, you can’t afford to wait for the air to get hot. You have to hit the food directly. That’s where short-wave infrared (IR) elements come in. The secret to the speed Think of it like the sun on a hot July day. You don’t feel the air getting warm first; you feel the heat hitting your skin instantly. Our IR elements do the same thing. They send electromagnetic radiation straight through the dough and toppings. Instead of waiting for the oven cavity to “warm up,” the core of the pizza starts cooking the second it hits the belt. By packing more wattage into every inch, we force the heat exactly where it needs to go. The gear inside We don’t use cheap glass here. These elements are built with high-purity quartz tubes. Why? Because when you’re cycling heat this fast, things get violent. Quartz can take that thermal shock without cracking. Inside the tube, we use a halogen-doped tungsten filament. It’s a fancy way of saying the filament won’t just burn out the moment you push it to those 90-second speeds. And since we know your line probably runs 24/7, we kept the connectors simple. We usually go with R7s or SK15 bases. They’re basically plug-and-play. When a tube finally pops, you just swap it out and keep moving. You aren’t wasting an hour messing with wiring while customers are waiting. A few things to watch out for Here’s the catch: when you dump that much energy into a small space, things get hot.Really hot. Your pizza will be perfect, but your oven chassis will be taking a beating. You’ve got to make sure your fans and ventilation are up to the task. If you skimp on the cooling, you’re going to fry your control boards, and that’s a headache nobody wants. Also, put away the manual switches. You can’t “eyeball” a 90-second bake. We recommend using PID controllers so you can nail the timing perfectly every time. Otherwise, you’re just one second away from a charred crust.
